Ingredients for Crispy Baby Corn

  • 250 gms Baby corn (partially boiled)
  • 2 tbsp Ginger garlic paste
  • 2 tbsp Rice flour
  • 2 tbsp Corn flour
  • 1 tbsp Wheat flour
  • 1 tsp chilli powder
  • 1 tsp garam masala powder (optional)
  • 1 tsp Chaat masala
  • Salt as per taste
  • Refined oil for shallow frying (1 cup)
  • Water for making batter

How to make Crispy Baby Corn

  • Firstly par boil baby corns in a pan over medium flame. While boiling add some salt in water.
  • Once Baby corns are boiled sieve them and drain extra water.
  • Slit baby corns into two halves.
  • Take a bowl and mix together rice flour, wheat flour, corn flour, ginger garlic paste, chilli powder, garam masala, and salt. Add some 4-5 tbsp water to make a medium consistency batter. Don’t make a runny batter.
  • Now take a pan and heat oil over low medium flame.
  • Dip boiled baby corns in the batter and coat them well.
  • Now shallow fry baby corns coated with batter in hot oil until golden brown.
  • When baby corns turn golden brown take them out on absorbent paper. Sprinkle some chaat masala on it.
  • Serve hot Crispy Baby Corn with chutney, ketchup and tea.

Recipe Notes

  • I personally like to steam baby corns to retain their crisp.
  • While shallow frying baby corns add some finely chopped spring onions for extra flavour.
