How to make Churma :
- Firstly take heat 3-4 tbsp Desi ghee in a wok/ kadhai over medium flame.
- Now add 1 cup wheat flour and start roasting it with constant stirring on medium flame for 3 minutes.
- Then keep roasting till aromatic but over low flame.
- When the flour starts becoming brownish add 1 tsp cardamom powder and 4 tbsp sugar.
- Mix well and switch off the flame.
- Keep stirring for another 1-2 minutes even after switchin off the flame.
This is the simplest method of making churma. You can add dry fruits of your choice roasted in ghee abd roasted makhana also.
Moreover you can make Halwa with leftover churma within few minutes.
How to make Makhana Kheer
- Firstly boil 1 litre full cream milk .
- Now in a thick base pan roast 1 cup makhana in 2 tbsp desi ghee over medium flame.
- Next add boiled milk in the pan and stir well.
- Cook it well with constant stirring in between for 8-10 minutes.
- After cooking for 8-10 minutes add 2 tsp green cardamom powder.
- Till now makhana would become soft and kheer will start thickening.
- Add 3-4 tbsp of sugar and mix well.
- Also add chopped dry fruits of your choice.
- Cook for another 2-3 minutes and switch off the flame.
- Let it cool and then garnish with dry fruits.
Makhana kheer is simplest form of kheer not only easy to make but delicious too. You can add 1 tbsp of milk powder or condensed milk for enhanced flavour. but while adding these reduce the quantity of sugar to be added.
How to make Besan Laddoo
- Dry roast 1 cup besan flour on a wok/ kadhai for 3 minutes over medium flame.
- Now add 4-5 tbsp desi ghee and stir well to avoid lumps over low flame.
- After 4-5 minutes of roasting mild aroma will start coming.
- When aromatic add 2 tbsp of desi ghee again and stir for another 3-4 minutes.
- Now add 3/4 cup of powdered sugar and 2 tsp cardamom powder.
- Mix well and stir for another 2 minutes.
- Now switch off the flame and let it cool for 5 minutes not more than that.
- Grease your hands with ghee and start making small balls. let them cool futher and Besan Laddoo are ready.
Cool the Besan Laddoo mix for 5-7 minutes only so that mild heat that can be tolerated while making balls. Cooling completely will harden the mix and smooth balls won’t be formed.
How to make Nariyal Pag
- Firstly prepare 3 wired sugar syrup.
- In a pan heat 1 cup water and 3 cups sugar.
- Keep cooking the sugar syrup till it starts thickening and 3 wires are formed when taken between fingers. now switch off the flame.
- Till the time sugar syrup is ready roughly chop dry fruits and roasted makhana.
- Add 1 cup grated dry coconut, dry fruits, makhana, 1 tsp cardamom powder to hot sugar syrup and mix well.
- Grease a plate or thali with ghee and spread the mixture for setting.
- When the mixture cools down to room temperature and starts setting gently cut pieces not too deep.
- Let it cool and set further then remove in pieces.
You can roast dry fruits in desi ghee for more flavour and taste.
