Cucumber raita is a very refreshing summer special delight. Cucumber raita for summer is a preparation of curd/ yoghurt with cucumber and spices. This goes well with pulao, Biryani, Khichdi, Dal Chawal etc.
There are different types of raita to balance the heat of spices in other food.
Ingredients:
- 2 cups beaten curds
- 1 tsp. ginger powder
- 3 tender cucumbers,
- washed 1 tsp. roasted cumin powder
- and finely grated pinch asafoetid
- 1 tsp. sugar
- ¼ tsp. mustard seeds
- ¼ tsp. garam masala
- few sprigs coriander
- few mint leaves
- chilli powder
- salt
Mix all the ingredients except mustard, asafoetida and green leaves. Heat 1 tsp. oil and toss in asafoetida and mustard seeds. When the seeds stop spluttering mix with raita. Garnish with coriander and mint.
