Tomato Poha

Indian kitchen is a treasure of so many healthy recipe options that just simple mix and match of few ingredients ends up in fulfilling and healthy recipes. Tomato Poha is also one such snack or breakfast option that is not only fulfilling but also very easy to make, healthy and tasty. Most of the ingredients required to make Tomato Poha are easily and mostly available at our home.

Moreover Tomato Poha is a very good Tiffin option that keeps you full maintaining your good health.

Let’s see how to make Tomato Poha

Ingredients to Make Tomato Poha

  • 2 cups thick poha (flattened rice)
  • 1 Medium onion – finely chopped
  • 1 Medium Tomato- finely chopped/ 1-2 tablespoon Tomato Puree
  • 1 tablespoon oil
  • 2-3 tablespoon Peanuts
  • ¼ teaspoon turmeric powder
  • 1 teaspoon mustard seeds
  • Salt as required
  • 10 curry leaves
  • 1 green chilli finely chopped (optional)
  • 2 tablespoons coriander leaves (cilantro leaves) finely chopped
  • 2 tablespoons lemon juice/ as required

How To Make Tomato Poha

  • Rinse the poha in water till they soften.
  • Heat oil in a pan over low to medium flame.
  • Now Crackle the mustard seeds first.
  • Add peanuts and fry them.
  • Then add onions and saute them till they become translucent.
  • Now add chopped tomatoes, salt, turmeric powder and mix well.
  • Add curry leaves and green chilies. Saute for 3-4 minutes till tomatoes become soft.
  • Next add the poha and stir.
  • Cover and steam the poha for 2-3 minutes on a low flame.
  • When cooking check after 1 or 1.5 minutes and give a stir again.
  • Switch off the flame and let the Tomato poha remain covered for 1-2 minutes.
  • Then Remove the lid and sprinkle some lemon juice, coriander leaves and grated coconut on poha.
  • Finally Mix well gently and serve Tomato Poha hot with tea/ coffee or juice or pack it in tiffin.

Recipe Notes:

  • I preferably use both chopped tomatoes and tomato puree as it give nice texture.
  • Moreover Add on multiple seasonal vegetables like carrot, corn, beans, peas and add on to nutritional value of Tomato Poha.
