Mango Kesari

Mango Kesari/ Mango Sheera is a delicious sweet dish infusing mango puree with semolina (Suji). Any sweet variety of mangoes can be used for the recipe, but just make sure that the mangoes are not fibrous. This just a modified version of Sooji ka Halwa with addition of mango puree.

Ingredients:

  • ¾ cup chopped mangoes
  • cup sugar, or add as required
  • 3-4 strands of saffron
  • 2-3 green cardamoms
  • 3 tablespoons ghee (clarified butter)
  • ½ cup sooji or rava (semolina)
  • 10 to 12 cashews
  • 1 tablespoon raisins
  • 1.5 cups water

How to make Mango Kesari Recipe (Mango Halwa/ Sheera Recipe)

  1. Firstly add chopped mangoes in blender jar and add sugar, cardamom seeds and blend to make a smooth puree.
  2. Keep this puree aside.
  3. Meanwhile soak strands of saffron in 2 tablespoon milk or water.
  4. Now in a sauce pan, take 1.5 cups water and heat it.
  5. In another pan or kadai, take 3 tablespoons ghee and let it melt.
  6. Keep the flame to low or medium-low and then add ½ cup fine rava (sooji).
  7. Also add 12 to 14 cashews.
  8. Roast the sooji in the ghee on a low to medium-low flame stirring often till it becomes aromatic.
  9. Once you roast the sooji, then add the mango puree to it and mix well.
  10. Add the boiling hot water in a slow stream. Be careful as the mixture splutters.
  11. As soon as you add the hot water, quickly begin to stir the halwa, so that lumps are not formed. For best results use a wired whisk while stirring.
  12. Also add water or milk of soaked saffron. Keep the strands for garnishing.
  13. You will see that the sooji absorbs water and the halwa begin to thicken.
  14. After stirring, cover the pan with a lid and on a low flame simmer the halwa for 2 to 3 minutes.
  15. All the water will be absorbed and the kesari will be done. If you want you can add some more ghee at this step.
  16. Serve mango rava kesari hot or warm or at room temperature.

Recipe Tips

  • Instead of water add milk to make Mango Kesari more tasty.
  • If the sooji is not roasted well, the halwa will become sticky or lumpy. So roast sooji well.
  • Serve mango kesari in small bowls or muffin cups. This looks more presentable especially for kids.
  • Garnish with tutti frutti for kids.
  • Add nuts as per choice.
  • Adjust the quantity of sugar accordingly.
