Ingredients for Indore Poha:

2 cups of medium-sized poha (flattened rice)
1 small onion, finely chopped
3 green chilies, finely chopped
1/4 teaspoon of turmeric powder
1 teaspoon of sugar
1 teaspoon of mustard seeds
1 teaspoon of fennel seeds
1 teaspoon of whole coriander seeds
2 tablespoons of oil
1/2 small bowl of green peas
8-10 curry leaves
Salt to taste

For serving:

Sev (fried gram flour vermicelli)
Finely chopped onions
Chopped coriander leaves
Roasted peanuts
Pomegranate seeds
Lemon wedges
Jeeravan Masala

How to Make Indori Poha:

First, rinse the poha 2-3 times and then set it in a sieve.

Heat oil in a pan on medium heat. When the oil is hot, add mustard seeds, fennel seeds, whole coriander seeds, curry leaves, and asafoetida (hing) to temper.

When the mustard seeds and fennel seeds start crackling, add finely chopped onions, peas, and green chilies. Sauté until the onions turn pink.

Then, add the rinsed poha to the pan. Sprinkle turmeric powder, salt, and sugar over the poha. Gently mix everything together using a spatula.

Cover the pan with a lid and let the poha cook on low heat for 2-3 minutes. After that, turn off the heat.

To make the poha slightly moist, sprinkle a little water over it.

One minute after turning off the heat, remove the lid from the pan.

Plate the poha and garnish it with chopped onions, sev, coriander leaves, lemon juice, roasted peanuts, pomegranate seeds, and Jeeravan Masala according to your taste.

Note: Jeeravan Masala is a special spice mix used in Indori Poha. You can prepare it at home or purchase it online. It includes ingredients like coriander, black salt, dried mango, asafoetida, dried ginger, and turmeric.
