Mix Vegetable Instant

When running short of time.  Need a fulfilling dinner, lunch or even breakfast, make instant mix vegetable in minutes. Experiment with vegetables of your choice.

However I keep trying out mix vegetable varieties with different combinations of vegetables.

Mind it, this is a great saviour at the times of urgent food preparation in less time.

Moreover for parties also this is a great and delicious side dish to add on to menu.

Let’s start with this quick, easy and delicious Mix Vegetable Instant Recipe.

Ingredients:

  • 2 tablespoon oil
  • 1 teaspoon Cumin (Jeera)
  • 2 teaspoon Ginger Garlic paste
  • 2 cups chopped vegetable like beans, cauliflower, carrot, capsicum
  • 1/3 cup soya chunks – soaked in water for 10-15 minutes
  • 100 gms of Paneer (cottage cheese) cubed
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon Degi Mirch
  • Salt as per taste
  • 1-2 Green Chilli finely chopped
  • 1 Medium Tomato finely chopped

How to Make Mix Vegetable Instant :

  1. Firstly heat oil in a pan on medium flame.
  2. Add cumin seeds, let them splutter and then add Ginger Garlic paste.
  3. Saute for 4-5 second.
  4. Now add chopped vegetables.If using peas saute them first for 1-2 minutes. Then add other vegetables and soya chunks.
  5. Saute these vegetables for 3-4 minutes.
  6. Next add chopped tomatoes, salt and other spices.
  7. Mix well and saute for another 2-3 minutes.
  8. Now cover the pan with lid and let the vegetables cook on low flame.
  9. If required add 2-3 tablespoon of water.
  10. Keep stirring occasionally. These vegetables usually take 7-8 minutes to cook.
  11. When vegetables are cooked add paneer cubes and mix.
  12. Cook for another 3-4 minuteson low flame.
  13. Finally Garnish with chopped coriander leaves.

Recipe Tips:

  • Improve aroma by adding 1/2 teaspoon Garam Masala.
  • 1 tablespoon Kasuri Methi (Dried Fenugreek Leaves) also adds on flavour.
  • Add 1 tablespoon of tomato puree also to have thick curry consistency.
  • Steamed Fresh or frozen peas adds on to flavour.
